AOP Côte-rôtie "Paradis" - Red Wine

From vines over 60 years old on the Côte Brune, this 100% Syrah embodies the power and elegance of the great Ampuis terroirs. Its clay-limestone soils give this cuvée exceptional depth, revealed through remarkable concentration and a highly complex aromatic palette. On the palate, the balance is perfect between finesse and intensity, with notes of black fruits, fine minerality and a lingering licorice finish. Carefully cultivated using manual and sustainable practices, this wine undergoes partial destemming, slow maceration, and fifteen months of oak barrel ageing. A long-ageing wine, it pairs beautifully with lamb shank or eggplant caviar, and is best enjoyed at 18°C to fully appreciate its depth.
